I really enjoy this cocktail…maybe a little too much! It is easy to make, it looks pretty and it taste so refreshing!!
PERFECT FOR A SUMMER AFTERNOON!…OR ANYTIME !!
1 1/2 tablespoon of mint-infused simple syrup
4 large strawberries, hulled and slides
5 fresh mint leaves for garnish
1.5 ounces of white rum ( or more if you wanna kick it up a notch!)
1 tablespoon of fresh lime juice
1/4 cup of tonic ( i personally think tonic water taste better than club soda but you can substitute for club soda if you prefer)
MINT INFUSED SIMPLE SYRUP:
1 cup of water
1 cup of granulated sugar
1 cup of fresh mint leaves
In a small bowl or glass, muddle simple syrup, strawberries, and fresh mint leaves until fragrant. Add a handful of ice to an old-fashioned glass (or any long, slender glass). Pour the strawberry mixture over the ice. Pour in the white rum and lime juice- (I use a lime press like the picture at the bottom). Add the tonic. Gently stir the drink and garnish with mint and lime.
MINT INFUSED SIMPLE SYRUP: In a small saucepan, combine water and sugar and bring to boil. Stir constantly until sugar dissolves. Remove from heat and pour syrup over mint leaves. Infuse for 20 minutes. Strain and discard mint and store syrup in the refrigeration.
